Fresh-Baked Oatmeal Cookies

Ingredients

Oatmeal Raisin Cookies

5 cups old-fashioned oats

8 oz. semisweet chocolate

1 lb. (4 sticks) unsalted butter (softened)

2 cups sugar

2 cups dark brown sugar

4 large eggs

2 teaspoons vanilla extract

4 cups all-purpose flour

2 teaspoons baking powder

2 teaspoons baking soda

1 teaspoon salt


2 cups old-fashioned rolled oats

15 oz. raisins (1 box)

2 cups walnuts (chopped)

Cooking Instructions

Preheat oven to 375°F.


Step 1: In a food processor or blender, grind the oats until they turn into a fine powder. Coarsely chop the chocolate and add it to the oats, processing until the pieces become as fine as possible. This may take a long time, but the finer the mixture becomes, the better the cookies will be. Set the oat-chocolate mixture aside. 


Step 2: Cream the butter and sugars in a large mixing bowl, add the eggs and vanilla, and mix well. In another bowl, combine the flour, baking powder, baking soda, and salt. Then gradually beat the flour mixture into the butter mixture.


If you are using a heavy standing mixer, add the oat mixture and beat it in; if you are using a handheld or a lightweight mixer, work the oat mixture in with your hands. Mix thoroughly.


No matter what kind of mixer you have, do the next step with your hands. Work the chocolate chips into the dough.


Step 3: Make balls of dough about twice the size of golf balls and place them on a cookie sheet lined with parchment paper.


Step 4: Bake cookies for 11 minutes, rotating the sheet halfway through baking.


Step 5: Let cookies cool before transferring them.
